A landmark study from the University of California Davis found that knife cuts in plastic cutting boards create deep grooves that trap and harbor bacteria — including Salmonella, E. coli, and Listeria. These grooves cannot be fully cleaned by hand washing or even dishwashers. Over time, the surface becomes a permanent reservoir for pathogens. Steel and titanium are non-porous.
